Bring back starting handles is what I say!
I dont know what I have fitted but I am going to seperate the vacuum hoses to piggy back and dumpvalve incase the piggy back is getting a pressure wave caused by the DV.
I think the car probably needs a good thrashing so roll on Saturday

If it is hitting 1 bar early (ish) I would say any increase in boost after that is down to boost creep rather than design of the map. It could be that the turbo wastegate needs porting to alleviate the creep problem then a proper map done on it to get it to a decent figure.
All the 16G's I have mapped on scoobies have hit max boost at less than 3000 on a decatted car. It depends on how strong your standard gearbox is (it isnt very) or how brave/lucky you feel. 3rd gear wont take much abuse.

If you went aftermarket boost controller, go for one that gives you the ability to set different boost levels per rpm (and by gear too ... AVCR is perfect for that) - that way you can get a punchier car for sprints. The 16G is a great turbo and well suited to your application. ESL is a good option too although you wont have the ability to adjust boost levels once mapped.
