Dumb question alert

Myself and a friend have decided to build a track day project , its going to trailered to and from the events so if we break it ,it can be tailered home and fixed(if only everything in life was as relible as a vw . . . . . . . . yeah right!) so in theory it will never be on the road , my question is does it have to be insured/mot'd to do a track day? and if it doesn't who and what checks are done before the car goes onto the track?
we intend to rebuild the suspension and brakes and repair any rust issues ( its 20 years old theres gonna be rust!!!) so it should pass just wont be pretty ,
anything else i should need /consider before we buy this motor?
