These are lovely cars. I'm on my second mk3 and you can't beat that lusty V6 lump. They can be prone to understeer and severe weight transfer with that heavy engine right over the front wheels but careful geometry tweeks and solid (hardest shore rating possible) bushing will do a lot there. An induction kit and decat make these things sing like songbirds

I replaced the n/s/f wishbone rear bush today got a genuine VW one and looked at the o/s/f one and thought "how the fook are you supose to do that one? looks like the engine has to be lifted to remove the front bush bolt as the sump is in the way :x ,

And I have looked through a couple of vw sites are some people say that they are ok but you get what you pay for, standard shocks are working out about

As you probably know, road compliance and trackwork do not go hand in hand, so some coilovers would be good. Raceland ones seem to be a very cost effective way of getting started in this way (not checked your eBay link)
At 1155kgs as standard, you should or could get it down to around 1070 easily enough but much less and you'll be looking at structural stuff/plastic windows etc so you degree of commitment would need to be carefully considered. I'd probably strip what you can easily replace and do the basics of tuning. For Gods sake baffle the sump (mk3 diesel one fits easily and so cheap) get the brakes done, bush the car and get stuck in.
Really try to invest a couple of hundred quid in alignment and corner weighting. It will transform the car
