The biggest thing to not beat yourself up about is the fact that at more moderate speeds you dont tend to have as much pressure on the pedals and everything is happenling a bit more slowly and this has the effect of making the act of rolling your foot over and getting the timing right much harder than when in full flight. However I also found years ago when I first tried it on the roads at sensible speeds that once you get a feel for whats happening with your feet (a bit like left foot braking) you can kind of do a 75% effort and just keep your body used to the actions involved at the roadspeed level, which then make that much more sense at full speed on track.
As I said, practice, but I guess you could modify that to practice with a balance of "its not quite right at this speed" common sense.
